Paprika oven chips

Chips are a very versatile food. With home baked oven chips you can vary the flavour very simply by sprinkling on herbs and spices.

This version is very simple. Sprinkle on some paprika just before baking the chips in the oven. The Hungarians use lots of paprika in their cooking and they have got it right. Not only does this spice add flavour to a broad range of foods but it colours it as well.

INGREDIENTS FOR PAPRIKA OVEN CHIPS

Almost all potatoes make excellent oven chips, we used our favourite Maris Piper.
 
Ingredient Amounts
Potatoes 1 kg / 2 lb 4 oz
Sweet paprika Half a teaspoon
Vegetable oil 4 tablespoons
Salt To taste

COOKING

Preheat the oven to 200°C / 400°F / Gas Mark 6

 
Wash the potatoes then cut them into thick wedges, about six for an average size of potato.  Coat the surfaces of the cut potatoes with the oil and then sprinkle over some salt. Finally sprinkle the paprika evenly over the cut potatoes.

Place them in an oven proof baking tray then into the oven turning every five to ten minutes to stop them sticking to the base of tray. They will take 25 to 30 minutes to cook.

When cooked, place them under a hot grill for 3 minutes and serve immediately.
