Cheesy oven chips

The choice of cheese for cheesy oven chips is a matter of taste
but we prefer strong cheddar, it adds a delicious tang to the chips. Another
cheese that went well for this recipe was Wendsleydale. This meal makes an
ideal snack or as part of a main meal. Try it with steak, they go together so
well. |

INGREDIENTS FOR CHEESY OVEN CHIPS
Almost all potatoes make excellent oven chips, we used our favourite Maris Piper.

Grated cheddar cheese |
70g / 2½oz / ¾cup |

Vegetable oil |

COOKING Preheat the oven to 200°C / 400°F / Gas Mark 6
| Wash the potatoes,
there is no need to peel them unless you dislike the skin. Cop your average
sized potato into 6 medium sized wedges. Put them in an oven proof dish and
liberally sprinkle with salt. Drizzle the vegetable oil over the potato wedges
and then place in the pre-heated oven for 25 to 30 minutes. Turn the chips half
way through cooking. Pre-heat the grill 5 minutes before the potatoes are
finished cooking. Remove the chips from the oven, sprinkle the cheese over
them and place under the pre-heated grill for three minutes until the cheese has
turned golden brown.
These chips can be served as part of a main meal or as a lunch time snack.
A tip is to sprinkle paprika over the cheese before putting under the grill.
This gives the chips a splash of colour. |
